Lunch on the go

I am often short on time or really lazy and never make myself lunch. I always struggle to get a quick snack from a supermarket but now, finally Tesco have a very nice sandwich. This is actually my favorite Tesco sandwich ever, even before I was vegetarian. It is so good :)

Happy days. Let's just hope they sell plenty or they will take it off the range :)

Banana bliss

Whilst making my smoothie this morning my blender broke! This is near disaster for me as I use it every day. Not happy, a 400 quid blender shouldn't start smoking when blending bananas!

Anyway, luckily it broke just as I was about to switch it off so my smoothie was still lovely and smooth

Todays ingredients:
2 bananas
1 apple
1 pear
1 cup soy or alternative milk
Lots of ice

Makes 1 pint and tastes delicious, like fruity bananas. Full of goodness and 3 of your 5 a day. Should keep you full for a while too :)

Purple lushness :)

Good morning bloggers :)

The sun is shining and its a beautiful day. Here is a delicious smoothie for you to enjoy for breakfast.

Ingredients:
3 bananas
100g blueberries
250ml soya milk
Handful of ice

Put all ingredients in a blender and blend until creamy smooth. Makes 1 pint. Drink immediately.

Delicious, filling and packed full of goodness. A great way to start the day :)

Sweet chilli peanut butter stir fry

OMG. This was the nicest stir fry I have ever eaten. It tasted so good I want more!
I found online a recipe for stir fry sauce:
1 tbs sweet chilli sauce
1 tbs peanut butter
1 tbs soy sauce or tamari
A little water if peanut butter is thick.

Well, in my cupboard I have a jar of sweet chilli peanut butter I got from a farmer's market. It's delicious and i recommend it. So, I thought I would cheat a little and use this instead of using sweet chilli sauce and peanut butter. If you don't have the sweet chilli peanut butter don't worry, use the ingredients as above, I'm sure it will taste just as good.
Mix all ingredients together in a small bowl.

For the stir fry I used what was in my fridge:
1 small onion
1 carrot
1 pak choi
1 asparagus stick
1 Portobello mushroom
1 spring onion
1 red pepper

You can use any combination of vegetables you have at hand.

Chop all vegetables into small pieces so they cook quickly.

Heat a little oil in the pan and add the onions, cook until soft, and then add the other ingredients and stir. Cook for 2-3 minutes and then add the sweet chilli peanut butter sauce mix. Stir and cook for a further 2 minutes or so.

Serve and eat immediately. Makes one portion.

This is so good and so simple. Takes about 10 mins to prepare and 5 mins to cook.

Super green tropical smoothie

Kick start your week with a super healthy tropical green smoothie. This delicious green monster is packed full of goodness.

Ingredients:
2 handfuls of spinach
1 orange (peeled)
1 banana (frozen)
Handful of frozen pineapple
Spoonful of desiccated coconut
1 cup (250ml) coconut milk
1 cup (250ml) water
Handful of ice

Put all ingredients in a blender and blend until smooth. Serves 2.

This is one of my favourite smoothies, tastes so good :)

Avocado Bagel

Just thought I would share this with you as it is my most favourite thing to eat for lunch.
Nice fresh wholemeal bagel, with avocado and cucumber.

I use half an avocado in each bagel. The avocado is a great meat replacement as its quite substantial and contains good fats.
If you've never tried avocados I recommend you do, they are so delicious. I had not tried them until about a year ago, people often told me they were not nice so it put me off. Well if anyone tells you they are not nice don't listen to them. These things are just delicious and can be used for so many things. Later in this blog I will post recipes for good uses of avocado, but for now, I am going to enjoy my bagel and savour the flavour :)

Fruity Quinoa Breakfast

My 2nd day at being a bit more adventurous with my breakfast and I have to say it tasted rather nice.
This one takes a little longer to make, 20-25 mins in total but while it was cooking it gave me chance to do the washing up and get the washing machine on. Multitasking :)

Ingredients:
1 1/2 cups (375ml) of "milk" - I used coconut milk
1/2 cup quinoa - remember to rinse before cooking
1/4 cup raisins
1/2 cup fresh fruit - I used raspberries and blackberries

Using a saucepan on the hob bring the milk to the boil then reduce the heat and add the quinoa and raisins. Cook for approx 15mins until the quinoa is cooked. Using a blender or food processor, pour the contents of the saucepan in and blend until smooth. Pour into a bowl, mix in the fruit and eat :)

Serves 2 but I ate it all myself :)

As quinoa is an excellent source of protein this breakfast is a great way to start the day and should keep you full until lunch :)

Really easy and simple to make and you can change the fruit you add to it to make it versatile and different every time :)
